Adventures in Weekend Baking

To tell you I remain busy is putting it lightly.

I am making time for everything fairly well, including myself and being true to myself the best that I can.

Suffice it to say, I'm still exhausted.

I'm still, behind.


I did manage to try that Gluten Free Almond Butter cookie recipe I've had on my list, this weekend. The Kid, allergic to peanuts had his first conceptual taste of a nut butter cookie. He said  it was a winner.

It took some ... work getting there.

For the first sheet, I put a dollop of jam on them in the last 2 minutes, attempting to get that peanut butter and jelly feel. It was tasty, but a hot visual mess, and if there was too much jam, I worried the bit of dough underneath was underdone.


Kinda ugly right? Kinda like a cookie casualty.

The "batter" is very crumbly and requires heavy shaping. Second sheet, I used a cookie baller and then with my hands sort of packed the balls more.

Each batch improved with time. Go easy on the sea salt. But the sprinkle definitely elevates the flavor with the dark chocolate. I'd chop some dried cherries in a batch too, cause, why not. Since the batter is so crumbly I would not put too much of anything in these cookies. One batch only calls for 1/2 cup of dark chocolate chips. See what I mean?

  1. Interesting. I haven't tried alternative recipes for those with certain allergies. Glad your son liked them. I say the jook is the newest thing to me right now.

    I keep putting off making a new recipe - a pear/cranberry crisp... but if I wait too long, the pears are going to be completely rotten!

  3. They look yummy, crumbly or not. I can't think of any new recipes I've tried at all - it's mostly been old favourites around here, apple crumble today, treacle tart and bread pudding to use up stale bread, flapjacks and cookies. Now that I've listed it all out it may explain why my jeans appear to be shrinking. Ooh, I did discover some new chocolate today - sour cherry and chilli. That was a winner. CJ xx

  4. Oh man. THose cookies look amazing! I made a black bean salad that came right from the DIner in Door COunty. Its black beans, oil and vinegar, green peppers cilantro and a dash of hot sauce. Mmmmmm good

  5. I love using a cookie shaper: mine is a mini ice cream scoop. No mess, and cookies are uniform. That said, I rarely make cookies anymore. Why, because I love them too much and can't stop myself.

  6. I don't bake like I did when the three kids were young because I, too, enjoy them and they disappear somehow. At this point, we seem to stick to old favorites......

  7. The cookies look delicious! I came home last week and found that one of the dogs (not naming any names - Maggie!) had stolen a whole six pack of gluten free blueberry muffins off of the counter (store bought, sorry) and eaten them all, papers and all!! She's such a bugger. I don't do a whole lot of baking, but I make really, really good chocolate chip cookies, pretty decent banana bread, and this time of year I make Christmas Crack (a chocolate bark recipe) that everyone loves. I give some out as gifts, but I have to watch what I have around the house, I have a sweet tooth, and I can't keep out of it, lol, I'll gain 20lbs!!!

  8. Nothing new, just the usual banana bread without nuts. Love the bread, not the nuts. But I was wondering what Banana Maple Syrup Pecan Bread would taste like? Who knows.
