Vacation Eating

We are winding down our week at the river. It's been lovely. However with a rental comes a lot of cooking. Definitely more than I do normally. We aren't home for 3 meals a day and dinner is via take out or eat out once a week with my schedule.

We also are cooking for The Kids lovely guests. Good boys, good eaters and good behavior influences (both have siblings).

Also my Dad came up and we had a great canoe trip and some tasty meals - surf & turf!

Now Auntie A. is visiting with Mabel dog and another wave of summer tastes are playing up.

Here are some samples:
Butterflied, grilled roaster chicken

Raspberry chocolate chip muffins

Fresh snack plate 

Grilled asparagus

Grilled Korean style short ribs 

Knitting is happening, but a lot of cooking too.

  2. My sympathies on all the cooking on vacation-a chef should come with the rental! Your menu looks stunning...I would love to drop in!

  4. Mmmmmm.....I always end up cooking and eating so much more on vacation too. It's been a long time since I had one but I remember being shocked at how often people need to eat. At home we snack more than we eat regular meals these days.

  7. Hahah Well first off, we do a chicken like that, but we have a chicken store by us and they take all the bones out before we grill it flat! Mmmmmm. Easier more even cooking. Ina Garten has a chicken recipe we use that's great for flattened chicken.
    Secondly, I refuse to cook on vacation. Mostly because I cook all the time.
    I used to refuse to even have a rental with a sink because as my mom says,
    "your just changing sinks"
    We are renting in the outer banks and AL is the cook. She wants to be. NOT ME. I would just eat cheese, and bread and fruit all week.

  8. It is funny how some vacations involve a lot of cooking. Sometime I enjoy that; other times, not so much. You really whipped up some yummy meals.
